Gramma’s Rolls

My Gramma used to make dinner rolls each weekend for Sunday dinner. They were always the most delicious thing! So buttery and yummy, but so heavy. We called them “Dunkers!” Anyway, I sat with her numerous times over the years, writing down the recipe as she made them, because she never measured anything, so I had to come back time after time to be able to recreate the recipe. This is the culmination of my efforts, and I’m pleased to say that I am the only one who has ever been able to successfully recreate them!

Ingredients

  • 1 Stick Margarine
  • 1 Tablespoon Sugar
  • 1 Tablespoon Yeast
  • 1 Cup Sugar
  • 1/2 Cup Warm Water
  • 1 Large Warm Bowl
  • 4 Cups Whole Milk
  • Pinch Salt
  • 5 Lbs Flour
  1. Add sugar and yeast to large bowl, then add water to bowl to activate yeast
  2. Cover bowl and place in oven
  3. Boil milk, then add margarine, salt, and sugar
  4. Remove pot from stove after boiling and let cool
  5. After about 25 minutes, add the sugar/milk/margarine mix to the large bowl
  6. Add approximately 4 cups of flour (either with whisk until thick, or mix with hands) – Should be of elastic consistency
  7. Cover again, and let sit in oven to rise, about 40 minutes, or double in size
  8. Add some flour onto counter and knead dough until firm, and hands don’t stick (should take 3-4 more cups of flour, a little at a time while working the dough)
  9. Cover, and let rise a second time, then knead to remove bubbles, and form into rolls
  10. Grease rolls with margarine as you place them into pans, then cover with dishcloth and let rise about 3 hours
  11. Bake at 350 for 30-45 minutes, until tops get golden brown
  12. Remove from oven and spread margarine on top of rolls

I don’t know how many rolls this makes – it’s just a ton of them. Gramma would always bake them in pie tins, and there would be 4 or 5 of them. I’ve also done them in 9×13 pans, it just depends on what you have available. These are best served warm, and you can always toss in the microwave for about 10 seconds to warm them up, then split, and spread some butter on them. Mmmm…Sooo good!!!
