Breadtzels

I think there is nothing better than a pretzel roll when it comes to burgers or pulled pork. My brother and I have our own recipe, that we call “breadtzels.” These are delicious!

Ingredients

  • 1 1/3 Cup Warm Water
  • 2 Tbsp Warm Milk
  • 1 tsp Yeast
  • 1/3 Cup Light Brown Sugar
  • 2 Tbsp Melted Butter
  • 4 Cups Flour
  • Kosher Salt
  • 2 Quarts Cold Water
  • 1/2 Cup Baking Soda

  1. Mix 1/3 cup warm water with yeast and let stand until foamy
  2. Add remaining cup of water, milk, sugar, and melted butter and swirl to dissolve sugar
  3. Add flour, and mix on dough cycle or medium-low speed
  4. Remove dough once it forms a firm, pliable dough ball (you may need to add more flour to achieve this)
  5. Turn dough out onto a lightly floured surface, and knead 2 minutes
  6. Rolls into a 2 foot log and slice into 12 even pieces
  7. Cover dough with a damp cloth and let sit for 10 minutes
  8. Pat dough into rolls, or form knots, and arrange an inch apart on a lightly floured surface, and cover with lightly oiled plastic wrap
  9. Let dough sit for 30 minutes
  10. Preheat oven to 425F and lightly oil 2 baking sheets
  11. In a large stockpot, bring the cold water to a boil and add baking soda
  12. Drop 2 balls in at a time and boil about 30 seconds, turning once
  13. Carefully remove with tongs or slotted spoon and hold above pot to drain
  14. Arrange rolls on baking sheets, slitting an X on the top and sprinkling lightly with salt
  15. Bake for 8-10 minutes, or until browned all over
  16. Let cool 5 minutes then transfer the rolls to a rack
  17. For best flavour, serve warm

These are absolutely delicious, and I will just eat them plan with a bit of butter! That being said, they are great for burgers or pulled pork, as their sweetness is an amazing complement to the flavours of the meat and toppings.
