What do you do with overripe bananas? I know some people just toss theirs, I prefer to turn mine into something delicious!

Ingredients
- 2 Cups Flour
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1/2 Cup Butter
- 3/4 Cup Brown Sugar
- 2 Beaten Eggs
- 2 1/3 Cup Smashed Banana
- Preheat oven to 350 F and grease a loaf pan
- In a large bowl, combine flour, baking soda, and salt
- In separate bowl, cream butter and brown sugar
- Stir in eggs and bananas until well blended
- Stir banana mixture into flour mixture until just moistened
- Pour batter into prepared loaf pan
- Bake 60-65 minutes, until toothpick inserted comes out clean
- Cool 10 minutes, then turn out onto wire rack
I have to say, this does make a thick batter, and you may have to leave it in the oven a bit longer than the recommended time, just due to the excess moisture of the bananas. I like to add chocolate chips to mine, or you could add nuts, if you so desire. I don’t have an exact amount of chocolate chips; I just dump them in by the handful and mix until it looks good to me.
