Apples are delicious, but sometimes you just get tired of pies. Enter this Apple Rum Cake!

Ingredients
- 3 Medium Apples
- 2 Large Eggs
- 1 Cup All Purpose Flour
- 1 Teaspoon Baking Powder
- 3/4 Cup Brown Sugar
- 1/4 Teaspoon Salt
- 1 Teaspoon Vanilla
- 8 Tablespoons Unsalted Butter
- 1/4 Cup Spiced Rum
- Heat oven to 350F
- Coat an 8-inch round pan with spray or butter, then line the bottom with parchment
- Melt 1 stick of unsalted butter
- Peel, core, and dice three apples
- Whisk flour, baking powder, and salt together
- In a separate bowl, whisk the eggs until fluffy, then whisk in the melted butter, brown sugar, rum, and vanilla
- Add the flour mixture and stir with a wooden spoon until just combined
- Add apples and fold until just combined
- Fill pan and smooth top
- Bake until a toothpick inserted in the center of the cake comes out clean; about 40 minutes
- Cool 15 minutes before removing from pan
- Dust with powdered sugar and serve
I had three leftover apples that Little Man decided he no longer enjoyed, and they were going soft before I could eat them. I then thought about this recipe, and pulled it out. I wish I had Smell-O-Vision, because this cake smells so absolutely delicious when it is baking in the oven. I’ve served this warm with a scoop of vanilla ice cream, or with whipped cream on top, but make it your own. I would be interested in trying some caramel drizzled over the top as well.
