Happy Mother’s Day to all the wonderful mothers out there!

I’m just popping in to say “Hi!” and share some quick recipes that I made last night and this morning for us to enjoy today.

First off is the Trifle I made last night. This will be our dessert tonight. If you follow me on FaceBook, you should have seen my FB Live video (I’ve also shared it on my YouTube) on what I do with my pound cake. I love pound cake, but have always found the Sara Lee version I find in the freezer section to just be drier than the desert. Now, for years I have made Dromedary pound cakes, but I could not find a Dromedary box mix this Easter and made my lamb cake with a Betty Crocker mix. The difference it made, and how moist! So, I made my pound cake, and one of the secrets I mentioned in the video is to take your pan, rub it with margarine, and then dump some of the dry mix into the pan and use that to coat the margarine. If I were doing a chocolate cake, I would use the mix or even some cocoa. It just makes for a better taste (and look) than if you were to use flour.

Now, this Trifle is my traditional banana version. After I took the cake out of the oven, I mixed a large box of Vanilla pudding and let it set for 5 minutes in the fridge before folding in a container of Cool Whip. That mixture then gets to sit for a while as the cake cools completely. To make the Trifle, I did a nice, thick layer of pound cake, followed by half the pudding/Cool Whip mixture, and then bananas. I repeated this and then finished with a whole container of Cool Whip spread over the top. The number of layers depends on the size of the bowl you have; I’ve done 4 layer trifles in the past.

This morning, I made some lovely cocktails. I picked up a bottle of cheap champagne, raspberries, and raspberry lemonade while Squatch and I were at the store yesterday. I threw the Raspberries in the freezer overnight. This morning, I put 5 raspberries in the bottom of each wine glass. Then I filled half the glass with the lemonade and finished off with champagne. These Raspberry Lemonade Mimosas were absolutely delicious! The raspberries were a little sparkly from the champagne when I ate them once my drink was all gone!
